So tonight we are making Jesse's Chicken Enchiladas. Of course we are making them vegetarian by using the Quorn Naked Cutlets. These are Mycoprotein based but it's amazing how much they taste like chicken. Like all things vegetarian they aren't as good as the carnivorous versions, but they are adequate substitutes. We've made this many times in the past before I became vegetarian and it's amazing how much the vegetarian version tastes like the original. I'd highly recommend this recipe, it's very easy and quick to make (other than the 45 minutes it's in the oven baking). It's a very different taste thanks to the coriander, curry, and cumin in the sauce. While it's very different it is definitely one of my favorites and I highly recommend it. Bon Appetite!!!
